Making muffins

DSC_0001Here’s a prototype for a low fat blueberry muffin recipe I’m ‘developing’. I’m using lots of fat free vanilla yogurt in it and I added some fruit smoothie instead of orange juice. I also went crazy with the blueberry content – resulting in an extremely gooey & moist, yet rather moreish muffin. When I’ve perfected the recipe (I’d like to experient with non-dairy yogurt and need to get them a little less gooey) I’ll post it up…

    Blueberries definitely make the best muffins.

  • SWOON! They look so good. I’d forgotten all about blueberries… you know how you just forget some fruits sometimes? I just remembered strawberries this week, they are ace.

    • I know exactly what you mean – I’ve been rediscovering the joys of cherries this week. However, I wish I didn’t have to remortgage our house in order to buy a punnet – they are pricey!
